Corned Beef Dinner

This is one of my favorites but I only get to eat it once a year. I have a couple of picky eaters that wouldn't touch the stuff. . . which means all the more for me.


* 3-4 lbs Corned Beef Brisket
* 8 Small Onions
* 8 Medium Carrots
* 4 Potatoes, quartered
* Caraway Seed


Drain meat.

Put meat in a 4 1/2 - 6 quart pan. Cover with cold water. Cover tightly with lid. Simmer 3 1/2 hours or until tender.

Skim fat from liquid. Add vegetables. Sprinkle with caraway seed. Cover. Simmer 20 minutes or until vegetables are tender.

To carve meat, cut diagonal slices across the grain.
